The Scramble

One of the best things my truelove and I did was subscribe to The Six O'clock Scramble. It is a menu planning site complete with great, simple, healthy recipes and a corresponding grocery list. Most recipes can be complete in 30 minutes. Side dishes and nutrition information are included with each recipe.
Our grocery bill is down, there is less food waste and we are eating healthy, balanced and darn-good meals!
Some of our favorites so far are Indian spiced salmon, seared salmon with lime butter, amazing zucchini pie, ratatoutie, saffron rice and bean salad, tacos del mar, Mediterranean quinoa salad, light tuna casserole with zucchini and tomatoes, grilled balsamic glazed salmon, rotini noodles with sundried tomatoes and goat cheese, VLTs, summer herb and vegetable stew, oven roasted halibut with caramelized red onions and spinach pie with portobello mushrooms.
An example of a recipe from our meal plan for this week...tonight we had a super delicious amazing zucchini pie (zucchini, basil, oregano, smoked mozzarella, Dijon mustard, yellow onion, eggs and other spices) with garlic cheese bread (split whole wheat pitas sprinkled with butter and garlic and then topped with part-skim mozzarella cheese under the broiler) and ambrosia salad (made with yogurt, lemon and honey over canteloupe, berries and bananas). This whole meal including the side dishes is only 449 calories, 20g fat, 52g carbs, 19g protein and 5g fiber.
Not only was it pleasing asthetically...not only did it taste delicious...not only was it aromatic...but it was filling, too!
